Tim and Karol join the current, and growing success of The Chef Hub, to be able to support the industry with the very same level of detail, passion and development, to deliver our expert approach, standards knowledge in Estonia, and delighted to be able to extend our business outside of the UK.
Tim Bramich & Karol Pawlik bring together many years of experience from the catering industry, from fine dining to catering, 5 star hotels to small restaurant's. Over the years they worked at and help open many venues.
Tim has successfully operated a private dining, cooking class, and degustation venue, "Köök", in Tallin's old town for over 10 years. Here they welcome many groups for team building, trainings and for friends to come together with a shared passion of food and drink. Over the years Tim has overseen new concepts and ideas to cope with increased competition in Tallinn.
In the past Tim was involved in the openings of Swissotel Tallinn, and fine dining restaurants in London. He has many years of developing menus & recipes, combining quality with low food costs. With Michelin star work experience and a love of the traditional techniques Tim has gone on to influence and train many chefs, either via the Kitchens he has worked in or via consulting roles.
Karol has over a 25 years in the hospitality/restaurant industry. His career includes over 12 years of cooking, managing and developing a young chefs for Italian celebrity chef Antonio Carluccio across the UK. Karol has several years as development and senior head chef for Paramount group in London (Chez Gerard, Brasserie Gerard, caffe uno) and also a couple of years as a head chef in one of London's well known seafood restaurant's Loch Fyne, located in the heart of Covent Garden. During his time with the Paramount group Karol was tasked with assessing financial and commercial viabilities of individual businesses.
During his career, he has taken part and overseen many new restaurant openings and also was directly involved and responsible for analysing under performing restaurants and then converting them into new and successful businesses.
In Tallinn, Karol was engaged for several years with Carmen group, helping them to develop new business strategies, converting and creating new business models and was also a founder of Korsten kitchen restaurant based in Kultuurikatel, which ranked highly in the Baltic guide. Karol is also cooperating with Köök leading cooking master classes.
Karol is also the founder of Spicepoint, a firm supplying high quality herbs and spices to the restaurant industry across the Baltic region.
Together Tim and Karol are a modern dynamic culinary influence, offering a range of high quality, expert kitchen consultancy packages, ranging from daily to weekly visits and bespoke around you - reflective of the work from the UK, along with personal training support, training documents and support administration to help structure your business, train your chefs, streamline your business and reduce expenditure.
