Shoot Season Chef – 5 Month Contract – Mid Wales
A returning and highly respected client is seeking an exceptional chef for the forthcoming six-month shoot season at one of Wales' most exclusive private shooting estates.
Set amongst the rolling hills and spectacular landscapes of Mid Wales, this is an opportunity to work in an extraordinary environment, catering for a discerning clientele including celebrities, prominent figures from the rich lists and ultra-high-net-worth individuals. This is a role for a chef operating at the very top of their game.
The Role
* Five month seasonal contract covering the shooting calendar.
* Producing breakfast, lunch, dinner service daily (and on site/cabin snacks and canapés) to an impeccable three AA Rosette standard.
* Catering for an exclusive private guest list where consistency, discretion and professionalism are paramount.
* Working with exceptional local produce and game.
* Daily foraging is an integral part of the culinary offering.
* Hands-on butchery skills are essential for daily changing meats pork/beef/venison/pheasant/partridge and more
* Delivering refined yet understated luxury, with attention to detail expected at every level.
The Ideal Candidate
* Proven experience within three AA Rosette or Michelin-standard kitchens.
* Outstanding butchery skills are a non-negotiable requirement.
* A genuine passion for foraging and seasonality.
* Ability to create exceptional food while maintaining consistency throughout a demanding season.
* Calm, composed and comfortable working around high-profile guests.
* Strong organisational skills and the ability to operate independently.
* Impeccable standards of cleanliness, professionalism and discretion.

Requirements
Ability to commute/relocate:
Powys, Wales: Reliably commute or plan to relocate before starting work (required)
Experience:
Min 10 years of culinary experience, to Sous Chef level (minimum)
Luxury setting 1 year with 3AA or Michelin recognised operations setting (minimum)
Passion for teamwork, creativity, and discression, and profesionalism is required
Licence/Certification:
Level 2 Food Hygiene Certificate (Minimum required)
H&S level 2 (required)
Allergen awareness training (required)
Work authorisation:
United Kingdom (required)
