An exciting opportunity has arisen to join a newly acquired country fully refurbished coaching inn, set against the spectacular backdrop of Snowdonia National Park. As part of an expanding luxury hospitality portfolio, the hotel is the sister property to one of the UK's most distinguished private shooting reserves, renowned for its exceptional standards, impeccable service, and commitment to creating memorable experiences.

We are seeking an authentic foodie with a genuine passion for exceptional produce, provenance, and hospitality. This is far more than an operational role; we are looking for someone who lives and breathes great food, understands the importance of storytelling through menus, and is driven to deliver experiences that exceed expectations.

After a full kitchen refurb and FOH makeover, this is one NOT to miss, stunning views, ultra local produce, and menu automation, as well as great seasonal development to lead and build on.

The Role
Working alongside our culinary and leadership teams, you will help shape and elevate the food and beverage offering across the hotel, for the immediate shoot season (September 2026 to February 2027) ensuring every aspect reflects the highest standards synonymous with our wider estate, complete the development of the restaurant ready for its launch between December 2026 and Spring 2027.

You will:

Champion outstanding local and seasonal produce, celebrating the best of North Wales and the surrounding countryside.
Working to a 70% GP on average during restaurant operation, and to a budget during shoot season.
Curate memorable dining experiences that combine creativity, authenticity, and luxury.
Work closely with chefs, suppliers, and front-of-house teams to deliver exceptional guest experiences.
Maintain uncompromising standards of quality, presentation, and service.
Develop relationships with artisan producers, fisheries, farms, and specialist suppliers.
Bring fresh ideas and a keen eye for detail to continually enhance our food offering.
Help establish the hotel as a destination for discerning guests seeking remarkable food and hospitality.
Design intricate, creative menus, including multi-course tasting menus and refine menus, ensuring a balance of quality, variety, and profitability to suit guests’ requirements and incorporate advanced culinary techniques and visually striking plating styles.
Have shoot season menu ready to launch by mid-September ready to be sent out to clients for pre-orders, Sourcing premium, artisan, and locally available seasonal ingredients

About You

A genuine foodie with an infectious enthusiasm for ingredients, flavours, and culinary trends.
Experience within luxury hotels, fine dining, premium hospitality, or destination venues.
Comfortable with rosette standards and quality
A strong appreciation for provenance, sustainability, and British seasonal produce.
Exceptional standards and a relentless focus on quality.
Creative, commercially aware, and passionate about delivering unforgettable experiences.
Warm, engaging, and naturally hospitable.

Requirements

Ability to commute/relocate:

Snowdonia National Park: Reliably commute or plan to relocate before starting work (required)

Driving will be essential to the location in this role


Experience:

Min 10 years of culinary experience, 1 year as Head Chef

Casual dining, volume and quality driven, with a proven background of 2-3 rosette standards

catering experience for 1 year

Confident knowledge of costing, EHO requirements foraging and butchery

Passion for teamwork, commitment and growth in a remote area


Licence/Certification:

Level 3 Food Hygiene Certificate (minimum required)

H&S level 2 (required)

Allergen awareness training (required)


Work authorisation:

United Kingdom (required) only, no sponsorship is available at this time
