At our two AA Rosette restaurant, we’re passionate about showcasing the best of local, seasonal produce. The menu changes every 8-12 weeks to celebrate the finest ingredients from trusted suppliers, ensuring each dish is fresh, vibrant, and full of flavour.
Set in its own ten acre woodland estate, the Castle's 7 foot thick walls provide a peaceful and tranquil refuge in which to escape from today's hustle and bustle to a bygone age. This combines to make this perfect for Weddings or for a special Castle getaway break.
What you'll do
As Head Chef, you will be responsible for:
Leading and inspiring a dedicated kitchen brigade.
Maintaining and exceeding 2AA Rosette standards.
Creating seasonal menus showcasing the finest local and regional produce.
Managing food costs, GP targets and stock control.
Recruiting, training, retaining, and developing the kitchen team.
Ensuring the highest levels of food quality, consistency and presentation.
Maintaining excellent food hygiene and health & safety standards.
Working closely with senior management to continue developing the reputation of the venue.
Previous experience as a Head Chef or Senior Sous Chef within a consistent Rosette or high-quality fresh food environment.
A passion for modern British cuisine and locally sourced ingredients.
Strong leadership and team development skills.
Excellent organisational and financial management abilities.
A hands-on approach with high standards and attention to detail.
A proven track record of delivering exceptional food and guest experiences.
Whats on offer;
£50,000 basic salary around 45 hours per week, - typical 5 day working week,
Tronc lift of minimum £4500 per year, free meals on shift.
Live in is available (Short term only) subject to relocation and commitment demonstrated from a working trial and strong CV background, and references.

Requirements
Ability to commute/relocate:
Northumberland: Reliably commute or plan to relocate before starting work (required)
Driving will be essential to the location in this role, some short term accomodation can be provided
Experience:
Min 2 years of culinary experience, continuous Head Chef Fine Dining, experience, 2AA rosette required, minimum 10 years culinary experience
Passion for teamwork, commitment and growth, good working culture
Licence/Certification:
Level 3 Food Hygiene Certificate (required)
H&S level 2 (required)
Allergen awareness training (required)
Work authorisation:
United Kingdom (required)
